Dosage:
- Use 3 - 4.5 grams per 1 US gallon between 54º and 59ºF
- Use 7.6 - 11.4 grams per 1 US gallon under 54ºF
Rehydration Instructions:
- Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 77°F - 84°F (25 - 29°C). Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
- Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 68°F (20°C). Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes, then mix the wort using aeration or by wort addition.

Fermentis Saflager S-189 originated from the Hürlimann brewery in Switzerland. It produces clean-tasting, drinkable beers including lagers, pilsners and more. It has a high attenuation and is highly flocculant producing very clear beers. Saflager S-189 ferments within a wide temperature range between 48.2° - 71.6°F (9° - 22°C) but ideally between 53.6° - 59°F (12° - 15°C).
