Weyermann Carafa special II (dehusked) malt is a lightly roasted specialty malt made from spring barley. It has an espresso-like aroma, coffee-chocolate flavor and a mild, roasty finish. It imparts an opaque, coffee-brown color and can substitute for 'chocolate' malt in any dark ale or lager style. This special 'dehusked' malt has been polished to remove up to 60% of the barley husk resulting in a smoother malt with less harsh or astringent flavors.
