Hallertau Mittelfüh from the Bavarian Hallertau region in Germany is one of the great noble hop varieties. It has a sweet, earthy, and herbal character of freshly mowed grass, sweet spices, dried flowers, and warm forest aromas of dry wood and humus. Hallertau provides a mild bitterness with a fine, elegant aroma and flavor.
Hallertau Mittelfrüh has been one of Europe’s most widely esteemed varieties for centuries and is practically synonymous with continental lagers (particularly Bavarian styles) and many types of German and Belgian ales. Its many offshoots and daughter hop varieties show some of the same qualities, but none have the same range and balance of flavor as Hallertau Mittelfrüh.

German Northern Brewer has a full, herbal character with floral notes. It has a very well-balanced flavor and a satisfying hoppiness. It is an offspring of Brewer’s Gold with some ancestry from an American wild hop. This English-bred variety is grown world-wide but Germany has become one of it's most favored growing regions.
