Lallemand CBC-1 Cask and Bottle Conditioning Yeast, 11g

  • Lallemand CBC-1 ale yeast is specifically selected for cask or bottle conditioning. It has a high resistance to alcohol and pressure and has a neutral flavor profile to preserve the original character of the beer. It forms a compact sediment after fermentation to result in a clear beer. It is a 'killer yeast' and discourages competing yeast during fermentation. Therefore, it should not be used in conjunction with other yeast strains and extra care should be taken to ensure proper sanitation after use. It is best used to ferment simple sugars such as dextrose because it is not able to ferment maltotriose. As a result, it will result in a fuller body and residual sweetness when used as a primary fermentation yeast. Alternatively, it can also be used for primary fermentation of Champagne-like beers, fruit beers and apple cider.
